Feng Sushi likes to mix traditional Japanese cuisine with more modern dishes. They take the best aspects from a craft practised for centuries to create sushi for the present day.
Co-founded by Silla Bjerrum in 1999, the chain now has eight restaurants around London; Fulham, Borough Market, Kensington, Notting Hill Gate, Chalk Farm, Billingsgate, Royal Festival Hall and their latest acquisition in Hampstead.
Danish by birth, Silla has the technique and skills of a traditional sushi chef but is more interested in modern interpretation of this ancient cuisine. Silla was the first woman to be invited to the prestigious 7 Samurai Sushi competition in 2008 and now teaches at Leith’s, Divertimenti and Billingsgate.
